Just joined this site. Looks like nobody else in Raleigh knows how to answer this ;) Here's a list to help you get started:
Restaurants with Vegan Specialties:
Remedy Diner (vegan menu available; most extensive selection in Raleigh)
Helios Cafe (hummus platter, quinoa)
Mellow Mushroom (vegan pizza)
Lilly's Pizza (vegan stromboli; many vegetarian options also)

Mantra
Blue Mango

Here's a growing list of Vegetarian Restaurants on the Triangle Wiki. The list of restaurants must have more than a veggie burger and salads. :-)
Aladdin's Eatery (two Raleigh locations - Off Falls of Neuse and Brier Creek) and The Wilmoore Cafe downtown both have vegan, vegetarian, and gluten-free options.
Remedy by far has the best vegetarian food and selection,but their service is not good. Mo Joe's has the best veggie burger in town. Zoe's kitchen and Neomonde's are also a great places for vegetarian food ( they both have good hummus)
Neomonde (on Hillsborough Street and in North Raleigh) serves some tasty Lebonese vegetarian dishes.
Irregardless Cafe near downtown, off Hillsborough St!!! Been in business 30 years.
I keep a list of Triangle area restaurants on Twitter that are vegan (https://twitter.com/#!/VeganTriangle/triangle-vegan/members). My favorite places to eat in Raleigh:
- Remedy
- Market
- Lilly's
- Whole Foods (of course)
Still need to try Solas & Blue Mango for vegan food (& Oro, Mandolin, the list is long).
For food trucks (when they come to Raleigh), I love the Triangle Raw Foods, Chirba Chirba, Kokyu, & Parlour trucks).
Margaux's (Creedmoor Rd.) has vegan items on the menu, but they will prepare something special and FANTASTIC if you call ahead and make reservations.
