Just joined this site. Looks like nobody else in Raleigh knows how to answer this ;) Here's a list to help you get started:

Aladdin's Eatery (two Raleigh locations - Off Falls of Neuse and Brier Creek) and The Wilmoore Cafe downtown both have vegan, vegetarian, and gluten-free options.

Remedy by far has the best vegetarian food and selection,but their service is not good. Mo Joe's has the best veggie burger in town. Zoe's kitchen and Neomonde's are also a great places for vegetarian food ( they both have good hummus)

Neomonde (on Hillsborough Street and in North Raleigh) serves some tasty Lebonese vegetarian dishes.

Irregardless Cafe near downtown, off Hillsborough St!!! Been in business 30 years.

Still need to try Solas & Blue Mango for vegan food (& Oro, Mandolin, the list is long).
For food trucks (when they come to Raleigh), I love the Triangle Raw Foods, Chirba Chirba, Kokyu, & Parlour trucks).

Margaux's (Creedmoor Rd.) has vegan items on the menu, but they will prepare something special and FANTASTIC if you call ahead and make reservations.
